Is there a way to override the standard s2s protocol between 2 tigase-servers and use BOSH instead?

No - not as an configuration option, nor would it make much sense.

s2s stands for server-to-server communication. Bosh stands for bidirectional-streams-over-synchronous-http. And then for certain client-to-server communication (web clients) we tunnel XMPP protocol over HTTP using Bosh.

In theory it is possible to use Bosh for s2s but as far as I know, none of the existing servers allow for this. However, if you have 2 servers on which you have full control over code and deployment you could customize them to use Bosh to connect to each other. However, I do not see any benefits for doing so.
